German Potato Salad

2 lbs. bacon
3 1/2 pounds potatoes, boiled & peeled
1 1/2 cup chopped onions
1/4 cup flour
1/4 cup sugar
1 1/2 cup water
1/4 cup white vinegar
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 cup light cream

In a large skillet cook bacon until crisp. Drain, reserving 3 tlbps. drippings, crumble bacon. In large bowl toss bacon with potatoes and onions. In the drippings combine flour and sugard. Combine water, vinegar, salt and pepper. Stir in skillet, cook and stir until thickened. Stir in cream. Pour over potato mixture, toss gently to coat. Serve warm. Mmmm tasy!

Strawberry Delight

1/2 Angel food cake (break into pieces)
8 oz. cream cheese
12 oz. cool whip

Whip cream cheese and cool whip together. Mix together with angel food cake. Top with your favorite filling.........strawberry, blueberry or cherry pie filling. Chill. mmmm tasty!

Chipotle Cole slaw

1/3 cup mayonaise
1 Tlbsp. Lime Juice
2 Tlbsp. honey
1/4 tsp. cumin
1/4 tsp. chipotle powder
3 cups shredded cabbage
3/4 cup corn
3/4 cup chopped red pepper
1/3 cup red onion-chopped
1/3 cup cilantro

Mix everything together. I use this on fish taco's. It's mmmm tasty!!!!

Hattie's Cabbage & Beef Soup


1 lb. ground chuck
1/2 tsp. garlic salt
1/2 tsp. garlic powder
1/2 tsp. pepper
2 celery stalks chopped
1 - 16 oz. can kidney beans
1/2 med. cabbage chopped
1- 28 oz. can diced tomatoes
1 tomato can water
4 beef bouilion cubes

In dutch oven, brown the hamburg. Add all remaining ingredients. Bring to boil. Reduce heat and simmer covered 1 hour. Mmmm tasty!!

Italian Meatball Soup Rapido


1/4 cup olive oil
1 cup chopped onions
4 garlic cloves, chopped
1 celery rib sliced and chopped
2 carrots, sliced
1 48 oz. chicken broth
2 1/2 cups water
20 frozen meatballs
2 14 oz. cans northern beans
5 to 6 oz. bag baby spinach(coursely chopped)
1/2 cup finely grated parmigiano-reggiano

Heat 2 talbsp. oil in a 6 quart pot over high heat until hot but not smoking, then cook onions, garlic, celery and carrots, stirring occasionally until onions are pale golden, about 4 minutes. Stir in broth and water and bring to a boil, covered.
Meanwhile, heat remaining 2 tlbsp. oil in a 12-inch skillettover high heat until hot but not smoking, then saute meatballs, turning occasiuonallyu, until browned all over, about 3 minutes. Add meatballs to soup along with beans, and briskly simmer, covered, stirring occasionally, until vegetables are tender and meatballs are heated through, about 15 minutes. Stir in spinach, cheese, salt, and pepper and simmer, uncovered, until spinach is wilted, about 1 minute. Mmmm tasty!

Oatmeal Cake


Cake
1 cup oats
1/2 cup soft butter
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp. vanilla
1 1/3 all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon

Preheat oven to 350 and grease 13 by 9 cake pan

Pour 1 1/4 cups boiling water over oats in a bowl. Let stand 20 minutes. Cream butter and sugars with a mixer. Add oats; mix well. Add eggs and vanilla; mix well.
Sift flour, baking soda, salt and cinnamon. Add to oat mixture; mix well. Pour into pan. Bake 30 to 35 minutes, until browned.

Preheat broiler.

Topping
1/4 cup soft butter
1/4 cup heavy cream
1 cup packed light brown sugar
1 cup shredded coconut

Combine all ingredients in a medium bowl; mix well. Spread evenly over warm cake. Place cake under broiler 2 inches from heat source. Broil until lightly browned, 1 to 1 1/2 minutes.

Garbonzo Bean Soup


1 corn beef (cook in crock pot)
Chunk up meat and use juice
1 48 oz. can chicken broth
2 pkg. garbonzo beans
1 1/2 cup onion
1 1/2 cup celery
1 1/2 cup carrots

Cook until garbonzo beans are tender. Mmmm tasty!!
